Weight Watchers Cinnamon Apple Pancakes
Ingredients
- 1 Pam cooking spray – butter-flavored to coat
- ¾ cup whole wheat flour
- ⅓ cup unsweetened applesauce
- ½ tbsp baking powder
- ½ cup skim milk or water
- 1 whole egg white lightly beaten
- ½ tbsp cinnamon
- 2 tbsp artificial sweetener
Instructions
- In a medium sized mixing bowl, add flour, sugar substitute, baking powder and cinnamon. Mix well.
- In a large mixing bowl, stir-in applesauce, skim milk, and egg white. Mix well
- Slowly stir in the dry mixture to the wet mixture until smooth with no lumps. Thin the batter if needed by adding 1 tablespoon of water to the batter and stirring in. Add more as desired.
- Heat the griddle or skillet. Spray with Butter Flavored Pam Cooking Spray
- Carefully drop batter onto heated griddle by 2 heaping tablespoons per pancake and using the back of the spoon, spread the batter a little to thin the pancake.
- Cook the pancake until lightly golden, Using a spatula, flip the pancake and cook the other side. Continue for the rest of the pancakes.
