Tips and Tricks
Pasta
Cook the penne al dente according to the package instructions. This ensures the pasta retains a firm texture when mixed with the other ingredients.
Olive Oil
Use extra virgin olive oil for a richer flavor. It enhances the taste of the garlic and pine nuts.
Garlic
Mince the garlic finely. Smaller pieces will distribute more evenly, providing a consistent garlic flavor throughout the dish.
Pine Nuts
Toast the pine nuts until golden brown. This brings out their natural oils and enhances their nutty flavor.
Tomatoes
Halve or quarter the cherry tomatoes for a better mix with the pasta. Smaller pieces distribute more evenly and blend well with the spinach.
Spinach
Squeeze out excess water from the thawed spinach. This prevents the dish from becoming watery and helps the flavors to concentrate.
Olives
Mix both black and green olives for a more complex flavor profile. Their distinct tastes add depth to the dish.
Feta Cheese
Crumble the feta cheese finely. Smaller crumbles mix better with the pasta and other ingredients, ensuring every bite has a bit of cheese.
Serving
Garnish with a sprinkle of freshly ground black pepper and a drizzle of extra virgin olive oil before serving. This adds an extra layer of flavor and a nice presentation.
Storage
Store any leftovers in an airtight container in the fridge. Reheat gently on the stovetop to avoid drying out the pasta.

Weight Watchers Greek Style Pasta
Equipment
Ingredients
- 12 ozs penne pasta
- 1 tsp olive oil
- 1½ tsp minced garlic
- 2 tbsp pine nuts
- 1 lb cherry tomato chopped
- 12 ozs frozen spinach thawed
- 6 medium black olives and/or green olives pitted and chopped
- 4 ozs feta cheese crumbled
Instructions
- Cook Penne according to the directions on the package but don't use butter or oil. When cooked, set aside.
- Spray a large skillet with Pam cooking spray. Put olive oil in skillet, heat on medium/high until oil is sizzling.
- Place garlic and pine nuts in skillet, and cook approx 3 minutes until the nuts are golden brown.
- Add tomatoes and spinach, stir, and cook approx 3 minutes (stir occasionally) or until heated through.
- Add contents of skillet to the pasta. Toss until fully mixed.
- Top with Feta cheese and olives to serve.
