Weight Watchers Microwave Fried Rice

Ingredients you will need:

  • 1 cup long grain rice
  • 1½ cups water
  • 1 cup fresh or frozen vegetables chopped
  • 1 medium onion chopped
  • 2 slices bacon chopped
  • 1 tbsp oil
  • 1 tbsp ketchup
  • 1 tbsp soy sauce

How to make:

  1. In a microwave safe container, add rice, water, vegetables, bacon, onion, oil, ketchup, and soy sauce. Mix well.
  2. Cover and microwave on high for 20 minutes. Let stand for approx 5 minutes.
  3. Stir rice. Serve.
