Weight Watchers Slow Cooker Jerk Turkey Soup
Equipment
Ingredients
- ½ tsp garlic salt
- ¼ tsp cayenne pepper
- ¼ tsp ground allspice
- ½ tsp ground ginger
- ½ tsp black pepper divided
- 1 lb boneless skinless turkey breast cut in 1-inch chunks
- 2 cups chicken broth
- 1 medium onion chopped
- 1 can (15oz) black beans drained and rinsed
- 1 can (14½ oz) fire-roasted diced tomatoes with green chilies undrained
- 1 clove garlic minced
- ½ tsp salt
- 2 tbsp fresh cilantro minced
- 1 tbsp fresh lime juice
Instructions
- In a medium sized mixing bowl, add garlic salt, cayenne pepper, allspice, ginger, and ¼ tsp of the black pepper. Stir to combine.
- Add the turkey and toss to coat well.
- Let the turkey sit in the spices for approx 15 minutes.
- In a slow cooker, add contents of the mixing bowl (turkey and spices), chicken broth, onion, beans, tomatoes, garlic, ¼ teaspoon of pepper, and salt.
- Place the lid on the slow cooker and cook on low for 6 – 7 hours.
- Stir in the cilantro and lime juice.
- Wait approx 5 minutes before serving.
