Tips and Tricks
Steaks
Choose well-trimmed rib eye steaks for the best flavor and texture. Allow the steaks to come to room temperature before cooking to ensure even cooking.
Seasoning
Season the steaks generously with salt and black pepper on both sides. This enhances the flavor and helps create a delicious crust.
Skillet
Use a heavy-bottomed skillet or cast-iron pan for even heat distribution and better searing. Preheat the skillet until it’s very hot to get a good sear on the steaks.
Cooking Steaks
Cook the steaks to your desired doneness. Use a meat thermometer to check the internal temperature: 125°F for rare, 135°F for medium-rare, 145°F for medium, 150°F for medium-well, and 160°F for well-done. Let the steaks rest covered with foil to keep them warm and to allow the juices to redistribute.
Sauce
Use high-quality Marsala wine for the sauce. If you don’t have Marsala wine, you can substitute with a dry white wine or red wine, though the flavor will differ slightly.
Garlic
Add the garlic off the heat to avoid burning it. Sautéing the garlic briefly helps to release its flavor into the sauce.
Deglazing
Deglaze the pan with beef broth and Marsala wine. This helps to lift the browned bits from the bottom of the pan, adding depth to the sauce.
Reducing the Sauce
Simmer the sauce until it reduces and thickens slightly. This concentrates the flavors and creates a rich sauce.
Finishing the Sauce
Whisk in the rosemary and butter off the heat to finish the sauce. The butter adds richness and gives the sauce a silky texture.
Serving
Pour the sauce over the steaks just before serving. Garnish with a sprinkle of fresh rosemary or parsley for added flavor and presentation.
Storage
Store any leftover steaks and sauce in an airtight container in the fridge. Reheat gently on the stovetop to avoid overcooking the steak.
Variation
Add a splash of cream to the sauce for a creamy version. You can also add mushrooms when sautéing the garlic for an earthy flavor.

Weight Watchers Marsala Steak
Ingredients
- 4 rib eye (8 oz each) well trimmed
- salt to taste
- black pepper to taste
- 2 cloves garlic minced
- ½ cup beef broth optional
- ½ cup Marsala wine
- ¼ tsp dried rosemary crushed
- 3 tbsp butter
Instructions
- Heat large skillet for approx 2 minutes over high heat, until very hot.
- Season steak to taste with salt and pepper
- Put steaks in skillet and turn down heat to medium high immediately.
- Cook steaks for 4 minutes. Turn over and cook the other side for approx 4 – 6 minutes to desired doneness.
- Place steaks on a platter. Cover platter with aluminum foil, and set aside.
- Take skillet off of heat, add garlic, and saute for approx 1 – 2 minutes. Reduce heat to low/medium. Put skillet back on heat add beef broth and Marsala wine. Bring to a boil. Reduce heat & simmer 3 minutes.
- Remove skillet from heat. Whisk in the rosemary and butter. Pour sauce over steaks when serving.
