Weight Watchers Potato Salad with Bacon

Ingredients you will need:

How to make:

  1. In a large sized saucepan, add potatoes. Add water to cover.
  2. Set heat to high, and bring to a boil.
  3. Reduce heat and simmer approx 20 minutes or until potatoes are tender
  4. Drain off water using a colander and set potatoes aside to cool.
  5. Cook bacon as directed on package in a skillet, or microwave until crispy. Drain on a paper towel, and break up to small pieces
  6. When potatoes are cool, cut to bite-sided cubes
  7. In a large mixing bowl, add potatoes, scallions, and bacon. Mix
  8. Add vinegar, mayonnaise, parsley, salt, and pepper. Mix well.
  9. Store in refrigerator
