Weight Watchers Potato Salad with Bacon
Ingredients
- 1½ lbs potatoes
- 3 slices turkey bacon
- ½ cup scallions chopped
- ¼ cup reduced-calorie mayonnaise
- 2 tbsp red wine vinegar
- ½ tsp salt
- ¼ tsp black pepper freshly ground
- 2 tbsp fresh parsley chopped
Instructions
- In a large sized saucepan, add potatoes. Add water to cover.
- Set heat to high, and bring to a boil.
- Reduce heat and simmer approx 20 minutes or until potatoes are tender
- Drain off water using a colander and set potatoes aside to cool.
- Cook bacon as directed on package in a skillet, or microwave until crispy. Drain on a paper towel, and break up to small pieces
- When potatoes are cool, cut to bite-sided cubes
- In a large mixing bowl, add potatoes, scallions, and bacon. Mix
- Add vinegar, mayonnaise, parsley, salt, and pepper. Mix well.
- Store in refrigerator
