Weight Watchers Pumpkin Flan
Ingredients
- ½ cup Splenda brown sugar blend unpacked
- ¼ tsp ground cloves
- ⅛ tsp salt
- ⅛ tsp cayenne pepper
- ½ tsp ground cinnamon
- ¼ cup orange juice
- ¾ cup egg substitute – fat-free
- 1 cup evaporated milk – fat-free
- 16 oz canned pumpkin puree (not pie filling)
- 8 tbsp whipped topping – light (optional)
Instructions
- Preheat the oven at 350° F
- In a large mixing bowl, add brown sugar, cloves, salt, cayenne, and cinnamon. Stir to mix.
- Using a whisk, stir in orange juice, egg substitute, milk, and pumpkin.
- Pour even proportions into 8 6-ounce custard cups.
- In a roasting pan, place the custard cups. Carefully add 1-inch of water around the cups.
- In the preheated oven, bake 45 minutes or until the edges are firm and a little puffed up.
- Remove the custard cups from the water, carefully.
- Cool the Flan fully. Then cover and place in the refrigerator.
- Serve with light whipped topping (optional)
