Tips and Tricks
Velveeta
Cut the Velveeta cheese into smaller cubes before adding it to the Crock pot. This helps it melt more evenly and quickly.
Chicken
For extra flavor, you can use rotisserie chicken instead of plain cooked chicken breast. Shred it well to distribute evenly throughout the dip.
Jalapenos
If you prefer a milder dip, you can omit the jalapenos or reduce the amount. For extra heat, leave the seeds in the minced jalapenos or add a dash of hot sauce.
Black Beans
Rinse and drain the black beans thoroughly before adding them to the Crock pot. This removes excess sodium and ensures they mix well with the other ingredients.
Stirring
Stir the mixture occasionally while it cooks to ensure the cheese melts evenly and all ingredients are well combined. This also prevents sticking to the sides of the Crock pot.
Serving
This dip is best served hot with tortilla chips, crackers, or vegetable sticks. It also makes a great topping for baked potatoes or nachos.
Storage
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop over low heat until warmed through.
Variations
For a heartier dip, you can add a can of corn (drained) or some cooked chorizo. This adds extra flavor and texture to the dip.

Weight Watchers Slow Cooker Chicken Nacho Dip
Equipment
Ingredients
- 1 can Rotel diced tomatoes & green chiles
- 1 lbs Velveeta cheese
- 2 large boneless skinless chicken breast halves cooked and shredded
- ⅓ cup sour cream
- ¼ cup green onions diced
- 1½ tbsp taco seasoning mix
- 2 tbsp minced jalapeno pepper or to taste (optional)
- 1 cup black beans rinsed and drained
Instructions
- In a Crock pot, combine Velveeta, Rotel, taco seasoning, chicken, green onions, and sour cream, and jalapenos.
- Cook on high setting. Stir occasionally to mix ingredients as the cheese melts. Approx 1 – 2 hours.
- Mix in black beans. Cook an additional 15 minutes. Serve.
