Tips and Tricks
Vegetable Prep
To ensure even cooking, try to cut all the vegetables into similar-sized pieces. This helps them cook at the same rate and ensures a uniform texture.
Garlic
For a deeper garlic flavor, you can sauté the minced garlic in a bit of olive oil before adding it to the slow cooker. This step is optional but adds an extra layer of flavor.
Tomato Paste
Mix the tomato paste with a bit of water before adding it to the slow cooker. This helps it distribute more evenly among the vegetables and prevents clumping.
Seasoning
Feel free to adjust the seasoning to your taste. You can add more red pepper flakes if you like a spicier dish, or reduce the salt if you’re watching your sodium intake.
Cooking Time
Check the vegetables after about 6 hours of cooking. Depending on your slow cooker, they might be done earlier. You want the vegetables to be tender but not mushy.
Serving
This dish pairs well with a crusty loaf of bread or over a bed of rice or pasta. Sprinkle each serving with grated Parmesan cheese just before eating for a delicious finish.
Storage
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop over low heat until warmed through.
Variations
For a protein boost, you can add some cooked chickpeas or white beans to the slow cooker. They will absorb the flavors of the vegetables and spices, making the dish heartier.

Weight Watchers Slow Cooker Ratatouille
Equipment
Ingredients
- 4 small zucchini cubed into 2 inch pieces
- 2 cloves garlic minced
- 2 large onions cut in half and sliced
- 2 large green bell peppers cut into thin strips
- 1 large eggplant cubed into 2 inch pieces
- 2 large tomatoes cut into wedges
- 1 tsp sugar
- 1 tsp dried basil
- 2 tsp salt
- ½ tsp black pepper
- 2 tbsp fresh parsley chopped
- red pepper flakes to taste
- ½ tsp oregano
- 6 oz tomato paste
- ¼ cup olive oil
- grated parmesan cheese to taste
Instructions
- In a large slow cooker, add zucchini, onion, garlic, green peppers, eggplant, and tomatoes,
- Add sugar, basil, parsley, salt, pepper, red pepper flakes, and oregano. Mix well.
- Add tomato paste. Mix well
- Drizzle with olive oil.
- Cover and cook on low setting 7 – 9 hours.
- Top each serving with Parmesan cheese.
