Topped with a sauce of orange juice, lemon juice, brown sugar, orange zest, lemon zest, and vanilla extract.

Weight Watchers Summer Fruit Salad

Ingredients you will need:

  • ⅔ cup fresh orange juice
  • ⅓ cup fresh lemon juice
  • ⅓ cup brown sugar packed
  • ½ tsp grated orange zest
  • ½ tsp grated lemon zest
  • 1 tsp vanilla extract
  • 2 cups fresh pineapple cubed
  • 2 cups fresh strawberries hulled and sliced
  • 3 kiwi fruit peeled and sliced
  • 3 bananas sliced
  • 2 oranges peeled and sectioned
  • 1 cup seedless grapes
  • 2 cups blueberries

    NOTE: You can add or remove any fruit you want. Try different combinations or in-season fruit!

Equipment you will need:

How to make Weight Watchers Summer Fruit Salad:

  1. In a saucepan, add lemon juice, orange juice, lemon zest, orange zest, and brown sugar.
  2. Set heat to medium-high and bring to a boil, stirring often.
  3. Reduce heat, simmer and stir occasionally approx 5 minutes or until it thickens slightly.
  4. Take saucepan off of the heat.
  5. Stir-in the vanilla extract. Let cool.
  6. In a large serving bowl, layer fruit.
  7. When fully cooled, pour the sauce over the fruit.
  8. Cover the bowl with plastic wrap, and place in the refrigerator for a minimum of 3 hours.
