Weight Watchers Trail Mix Cookies
Ingredients
- ½ cup brown sugar
- ½ cup sugar
- ½ cup applesauce
- 1½ tsp vanilla extract
- 2 large egg whites
- 1¼ cups all-purpose flour
- ½ tsp salt
- 1 tsp baking soda
- ¾ tsp ground cinnamon
- ½ cup walnuts chopped
- 1¼ cups quick cooking oats
- ⅓ cup dried cranberries
- ½ cup semisweet chocolate chips
Instructions
- Preheat the oven to 350° F
- Grease 2 cookie sheets
- In a mixing bowl, or a stand mixer bowl, add brown sugar, white sugar, applesauce, and vanilla.
- Using an electric mixer, beat to combine
- In another mixing bowl, add egg whites. Beat until they start to firm up.
- Fold egg whites into the sugar mixture.
- In a mixing bowl, add flour, salt, baking soda, and cinnamon. Stir to combine
- Fold flour mixture into the sugar mixture
- Stir in walnuts, oats, cranberries, and chocolate chips.
- On the prepared cookie sheets, drop batter by heaping teaspoons.
- In preheated oven, bake approx 10 minutes, or until lightly browned and set.
- Transfer cookies to wire rack right away to cool.
