Weight Watchers Tuna Pasta Salad
Ingredients
- 6 oz pasta – uncooked
- 12 oz canned tuna in water
- ½ cup cherry tomatoes halved
- ¼ cup celery chopped
- ½ cup bell pepper cut into strips
- ½ tsp ground red pepper
- ¾ cup salsa – low-salt
- ½ cup mayonnaise – low-fat
- 2 tbsp green onions sliced
Instructions
- Boil the pasta according to the directions on the package, but don't add salt.
- Using a colander, drain the pasta, and rinse with cold water. Return to saucepan and set aside.
- In a small mixing bowl, break up tuna. Add tomato, celery, and bell pepper. Stir to mix.
- Add contents of small mixing bowl to the pasta. Stir to mix.
- In the mixing bowl, add ground red pepper, salsa, and mayonnaise. Mix well.
- Add salsa mix to the pasta and toss to mix.
- Transfer to a serving bowl, top with green onions, cover, and refrigerate to chill.
