Weight Watchers Pumpkin Soup

Ingredients
- 4 cups pumpkin puree
- 1 cup onion chopped
- 1 clove garlic minced
- ½ tsp fresh thyme chopped
- 6 cups chicken stock
- 5 whole black peppercorns
- 1½ tsp salt
- ½ cup heavy whipping cream
Instructions
- In a stock pot, add pumpkin, onion, garlic, thyme, chicken stock, peppercorn, and salt.
- Bring to a boil
- Reduce heat and simmer uncovered for 30 minutes.
- In a food processor, puree soup one cup at a time.
- Return the soup to the stock pot. Bring to a boil.
- Reduce heat and simmer, uncovered for 30 minutes.
- Add heavy cream. Stir to mix
- Serve
