Tips and Tricks
Onion
Cook the Vidalia onion until it is well caramelized. The sugar helps to speed up the caramelization process and brings out the onion’s natural sweetness. Stir frequently to prevent burning.
Cheese Mixture
Ensure the ricotta and Parmesan cheese mixture is well combined. This will ensure an even distribution of flavors on the pizza.
Spinach and Basil
Chop the fresh spinach and basil coarsely. This adds texture and a burst of fresh flavor to the pizza.
Pizza Crust
Use a pre-baked pizza crust to save time and ensure a crispy base. If you prefer, you can use homemade or store-bought dough and pre-bake it yourself.
Grilling
Spray the grill rack generously with nonstick spray to prevent the pizza from sticking. Place the pizza off to the side of the direct heat to avoid burning the crust.
Cooking Time
Keep an eye on the pizza while it’s on the grill. Rotate it halfway through the cooking time to ensure even cooking and prevent any hotspots from burning the crust.
Serving
Serve the pizza hot off the grill. For added flavor, sprinkle a bit of extra fresh basil on top before serving.
Storage
Store any leftovers in an airtight container in the fridge. Reheat in the oven or on the grill to maintain the crispiness of the crust.
Variation
Add other toppings like sliced tomatoes, mushrooms, or olives for extra flavor and variety. Be careful not to overload the pizza to ensure even cooking.
Presentation

Weight Watchers White Pizza with Spinach
Ingredients
- 2 tsp olive oil
- 1 tsp sugar
- ½ tsp salt
- 1 cup vidalla onion coarsely chopped
- ¼ cup ricotta cheese – part-skim
- 4 tbsp parmesan cheese freshly grated
- ½ cup fresh spinach coarsely chopped
- 2 tbsp fresh basil chopped
- 8 inch pre-baked pizza crust
Instructions
- Prepare grill by spraying Pam nonstick spray on the rack, and heating to medium.
- In a large non-stick skillet, at medium/high heat, heat olive oil. When hot, add sugar, ¼ teaspoon of salt, and Vidalla onion. Cook while stirring, approx 8 minutes or until onion is browned.
- In a small mixing bowl, add ricotta cheese, parmesan cheese, spinach, ¼ teaspoon of salt, and basil. Mix well.
- Put pizza crust on a pizza peel. Evenly spread prepared mixture over the top of the crust. Top with onion and 2 tablespoons of parmesan.
- Place pizza on grill off to the side of the heat. Cover and cook approx 4 minutes. Rotate pizza ½ way around and cook approx 4 minutes or until cheese is melted.
