How to make:

  1. In a large soup pot, add butter, celery, carrots, and onions.
  2. Saute over medium/high heat
  3. Add curry and flour. Cook for 5 minutes.
  4. Add in chicken stock. Stir to mix well.
  5. Bring to a boil
  6. Reduce heat and simmer 30 minutes.
  7. Add chicken, rice, apple, thyme, salt, and pepper.
  8. Simmer 15 to 20 minutes or until rice is cooked.
  9. Right before serving, add in the heated heavy cream.
