  • In a large soup pot, add butter, celery, carrots, and onions.
  • Saute over medium/high heat
  • Add curry and flour. Cook for 5 minutes.
  • Add in chicken stock. Stir to mix well.
  • Bring to a boil
  • Reduce heat and simmer 30 minutes.
  • Add chicken, rice, apple, thyme, salt, and pepper.
  • Simmer 15 to 20 minutes or until rice is cooked.
  • Right before serving, add in the heated heavy cream.
