Ingredients
- 1½ cups Fiber One cereal ground to a powder
- 1 box (20oz) low-fat brownie mix
- 2 tbsp Splenda granular
- 4 tbsp cocoa
- 1 tsp baking powder
- 1 can (15oz) pumpkin
- 1 pkg (8oz) fat-free cream cheese softened
- 4 oz applesauce
Instructions
- Preheat oven to 350° F
- In a food processor, add Fiber One cereal and process to a fine powder.
- In a mixing bowl, add brownie mix, prepared Fiber One cereal, Splenda, cocoa, and baking powder. Stir to mix well.
- Stir in applesauce, cream cheese, and pumpkin. Mix well.
- Using a spoon, add batter to muffin tin (makes 22 brownies)
- Bake in preheated oven for 18 minutes.
