Weight Watchers Potatoes with Herbes de Provence
Equipment
Ingredients
- 1½ lbs tiny new potatoes scrubbed
- 1 tbsp extra virgin olive oil
- ½ tsp herbes de provence
- ½ tsp coarse salt
- ½ medium juice of lemon
- fresh ground black pepper to taste
Instructions
- In a large saucepan, add whole potatoes and enough salted water to cover.
- Over high heat, bring to a boil, reduce heat and cook approx 10 minutes or until just tender.
- Using a colander, drain off water.
- In a large skillet, add extra virgin olive oil. Heat over medium/high heat.
- Add herbes de provence, cook while stirring continuously approx 10 seconds.
- Add potatoes, lemon juice, and salt. Stir to coat well.
- Cook while stirring continuously approx 2 minutes or until the potatoes have heated through.
- Season with pepper.
- Serve immediately.
