  • In a large saucepan, add whole potatoes and enough salted water to cover.
  • Over high heat, bring to a boil, reduce heat and cook approx 10 minutes or until just tender.
  • Using a colander, drain off water.
  • In a large skillet, add extra virgin olive oil. Heat over medium/high heat.
  • Add herbes de provence, cook while stirring continuously approx 10 seconds.
  • Add potatoes, lemon juice, and salt. Stir to coat well.
  • Cook while stirring continuously approx 2 minutes or until the potatoes have heated through.
  • Season with pepper.
  • Serve immediately.
