This healthy version of the popular King Ranch Casserole is the perfect comfort food using left-over chicken.

Some say it was named after the King Ranch in the state of Texas, and some say that is a myth. Whatever the true story is doesn’t matter, it’s a fabulous dinner!

How to make:

  1. Saute pepper and onion in a skillet with cooking spray until cooked through, about 2 minutes.
  2. In a mixing bowl, combine pepper-onion mixture with soup, tomato, and .chicken
  3.  Alternate layers of tortillas and soup mix. Sprinkle cheese on top.
  4. Bake casserole in the 325 degree preheated oven until bubbling, about 40 minutes. Increase the oven temperature to broil. Broil the casserole until top is golden, 2 to 3 minutes more
