Ingredients you will need:

  • 2 cloves garlic peeled
  • 2 lbs sweet potatoes approx 3 potatoes – peeled and cut into 1 inch pieces
  • 4 tsp sugar
  • ½ cup vanilla Greek yogurt – fat-free
  • ⅛ tsp salt or to taste
  • ⅛ tsp fresh ground black pepper 

How to make:

  1. Using a large saucepan, add garlic, sweet potatoes and water to cover.
  2. Over high heat, bring to a boil and cook until tender (approx 8 mins.)
  3. Using a colander, drain water off.
  4. In a large bowl, add cooked garlic and sweet potatoes. Add sugar and Greek yogurt.
  5. Using a potato masher, mash until the well mixed and smooth.
  6. Season with salt & pepper to taste.
