Weight Watchers Mashed Sweet Potatoes
Ingredients
- 2 cloves garlic peeled
- 2 lbs sweet potatoes approx 3 potatoes – peeled and cut into 1 inch pieces
- 4 tsp sugar
- ½ cup vanilla Greek yogurt – fat-free
- ⅛ tsp salt or to taste
- ⅛ tsp fresh ground black pepper or to taste
Instructions
- Using a large saucepan, add garlic, sweet potatoes and water to cover.
- Over high heat, bring to a boil and cook until tender (approx 8 mins.)
- Using a colander, drain water off.
- In a large bowl, add cooked garlic and sweet potatoes. Add sugar and Greek yogurt.
- Using a potato masher, mash until the well mixed and smooth.
- Season with salt & pepper to taste.
