Weight Watchers Orange Chicken
Equipment
Ingredients
- 4 tsp canola oil
- 1 lb boneless skinless chicken breast cut into strips
- 1 tbsp fresh ginger minced and peeled
- ¼ cup water
- 2 cups broccoli florets
- ¼ cup orange juice
- 3 tbsp reduced-sodium soy sauce
- ½ cup low-sodium chicken broth
- 1 tsp cornstarch dissolved in 1 tsp water
- 1 orange peeled and sectioned
Instructions
- In a skillet, add oil and heat. Add in chicken. Cook for 3 mins.
- Add in ginger and cook until the chicken is done, approx 2 minutes. Remove chicken from skillet and set aside.
- Add water and broccoli to the same skillet. Scrape the bottom of the skillet to incorporate the leftover chicken scraps. Cover and cook approx 3 to 4 minutes or until the broccoli is tender and crisp.
- Add the chicken back into the skillet. Stir in the orange juice, soy sauce, and the chicken broth. Mix in the cornstarch. Stir often until it comes to a boil and the sauce thickens a bit. Add orange pieces and heat through. Serve.
