  • Using a large skillet, add olive oil.
  • Heat olive oil over medium heat.
  • Add the tomatoes to the heated skillet.
  • Cook the tomatoes approx 3 – 5 minutes, until the juices start to evaporate.
  • Crack the eggs into the skillet without breaking the yolks.
  • Cook until the eggs cook to preferred doneness.
  • Season with salt and/or pepper to taste.
