Weight Watchers Poached Eggs with Tomato Sauce

Ingredients
- 2 tbsp extra virgin olive oil
- 4 medium whole ripe tomatoes chopped
- 4 large eggs
- salt and black pepper to taste
Instructions
- Using a large skillet, add olive oil.
- Heat olive oil over medium heat.
- Add the tomatoes to the heated skillet.
- Cook the tomatoes approx 3 – 5 minutes, until the juices start to evaporate.
- Crack the eggs into the skillet without breaking the yolks.
- Cook until the eggs cook to preferred doneness.
- Season with salt and/or pepper to taste.
