Weight Watchers Pumpkin Spice Cookies
Ingredients
- 1 cup rolled oats
- 2½ cups all-purpose flour
- ¼ tsp salt
- 1 tsp pumpkin pie spice
- 1½ tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground nutmeg
- 4 tsp baking powder
- 1⅓ cups light brown sugar
- 2 tbsp butter
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup apple butter
- 15 oz canned pumpkin
- 1 cup walnuts chopped
Instructions
- Preheat oven to 375° F
- Prepare Two baking sheets by spraying with non-stick cooking spray.
- In a large mixing bowl, add oats, flour, salt, pumpkin pie spice, cinnamon, ginger, nutmeg, and baking powder. Mix well.
- Using a large mixing bowl, or electric mixer, add brown sugar and butter. Beat until smooth.
- Add in 1 of the eggs. Beat until smooth.
- Add 2nd egg and vanilla. Beat until blended
- Add apple butter and pumpkin. Beat until smooth.
- Add in the prepared flour mixture Blend until just incorporated.
- Fold in walnuts until evenly mixed in.
- Drop by spoonfuls onto the prepared baking sheets approx 2 inches apart.
- In preheated oven, bake approx 12 minutes or until the edges of the cookies are golden.
- Cool on baking sheets for approx 1 minute and then move the cookies to a wire rack to finish cooling.
