Tips and Tricks
Sautéing Onions
Make sure the oil is hot before adding the onions. Cook the onions until they are translucent and tender, which should take about 5 minutes. This helps build a flavorful base for the rice.
Toasting the Rice
After adding the rice to the skillet, stir frequently to toast the rice evenly. This step adds a nutty flavor and helps the rice absorb the liquids better.
Adding Liquids
When the rice starts to brown, add the chicken broth and salsa. Stir well to ensure the rice is evenly coated with the liquids.
Simmering
Once the liquids are added, reduce the heat to low, cover the skillet, and let it simmer. Do not lift the lid frequently, as this allows steam to escape and can affect the cooking process. The rice should absorb the broth and salsa in about 20 minutes.
Fluffing the Rice
After the rice has absorbed all the liquid, remove the skillet from heat and let it sit, covered, for about 5 minutes. Then, use a fork to fluff the rice before serving.

- 2 tbsp vegetable oil
- 2 tbsp onions chopped
- 1½ cups uncooked white rice
- 2 cups chicken broth
- 1 cup chunky salsa
Instructions
- In a large skillet, heat oil on medium heat, When hot, add onions, cook until they are tender. Approx 5 minutes.
- Add rice in with the onions stir frequently. Add salsa and chicken broth when rice starts to brown.
- Reduce heat, cover, & simmer until the rice absorbs the broth. Approx 20 minutes.
