Weight Watchers Tex-Mex Chicken Salad

Ingredients
- ยฝ medium red bell pepper chopped
- ยฝ medium green bell pepper chopped
- 2 medium scallions chopped
- 1 can (15 oz) corn drained
- 1 can (15 oz) black beans drained and rinsed
- 1 tbsp corn oil
- 2 tbsp lime juice
- 8 ozs boneless skinless chicken breast cooked and chopped
- 2 tbsp reduced-sodium taco seasoning mix
- 4 tbsp fresh cilantro chopped
- 4 tbsp sour cream – reduced-fat
Instructions
- In a large mixing bowl, add red sweet pepper, green bell pepper, scallions, corn, and black beans. Mix well.
- Add lime juice and oil to bean mixture; toss to coat
- Mix in (toss) taco seasoning, cilantro, and chicken.
- Top each serving with sour cream, if desired.
