  • In a large mixing bowl, add red sweet pepper, green bell pepper, scallions, corn, and black beans. Mix well.
  • Add lime juice and oil to bean mixture; toss to coat
  • Mix in (toss) taco seasoning, cilantro, and chicken.
  • Top each serving with sour cream, if desired.
