Weight Watchers Spinach Tortellini Soup
Equipment
Ingredients
- 1 tbsp olive oil
- 1 clove garlic minced
- ½ cup minced onion (about 1/2 small onion)
- 1 can whole tomatoes – 14 oz crushed
- 4 – 6 cups vegetable broth
- 9 ozs cheese tortellini
- 10 ozs frozen spinach defrosted & chopped
- black pepper to taste
- salt to taste
Instructions
- Heat olive oil in a large soup pot at medium/high heat.
- In the soup pot, saute the minced onion and the garlic, until onions become translucent, Approx 6 to 8 minutes.
- Put tomatoes and broth in the soup pot and turn up heat to high. Bring to a boil.
- Add tortellini to the soup pot, cook as instructed on the package.
- Just before the tortellini is done, add in the spinach (amount to your taste). Add pepper and salt to taste. Serve immediately.
