Tips and Tricks
Sauteing Aromatics
For best flavor, make sure to saute the onions and garlic until they are just beginning to caramelize. This adds a depth of flavor to the soup. Be careful not to burn the garlic, as it can turn bitter.
Using Fresh Tomatoes
If you prefer fresh tomatoes, you can use about 4 medium tomatoes. Blanch them in boiling water for a minute, peel off the skins, and crush them before adding to the soup pot.
Broth Selection
Use a high-quality vegetable broth for a richer flavor. You can also use chicken broth if you’re not strictly vegetarian. Adjust the amount of broth based on how thick or thin you like your soup.
Cooking Tortellini
For perfectly cooked tortellini, follow the package instructions carefully. Be sure to stir occasionally to prevent them from sticking to the pot.
Spinach Addition
Adding the spinach just before the tortellini is done ensures it retains its bright green color and nutrients. If you prefer a heartier soup, you can add more spinach.
Seasoning
Taste the soup before adding salt and pepper. The broth and tomatoes may already add enough saltiness, so add these seasonings gradually.
Enhancing Flavor
For an extra flavor boost, consider adding a splash of balsamic vinegar or a pinch of red pepper flakes to the soup before serving. Freshly grated Parmesan cheese also makes a great topping.
Serving Suggestions
Serve the soup with a side of crusty bread or garlic bread for a complete meal. A simple green salad can also complement the soup nicely.
Storing Leftovers
Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat gently on the stove over medium heat, adding a little extra broth if needed to thin the soup.
Freezing
If you plan to freeze the soup, it’s best to do so without the tortellini, as they can become mushy when reheated. Add freshly cooked tortellini when you reheat the soup.
