  • 2 cups low-fat cottage cheese
  • 2 cups cooked brown rice
  • 1 can (15 ounces) black beans well rinsed and drained
  • 1 cup corn
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 medium avocado diced
  • ½ cup red onion finely chopped
  • ½ cup salsa

  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder

Instructions
 

  • Heat a large skillet over medium heat.
  • Add the black beans and corn to the skillet. Add the cumin, chili powder, garlic powder, smoked paprika, and salt.
  • Cook for 4 to 5 minutes, stirring occasionally, until heated through.
  • Divide the brown rice and romaine lettuce between 4 bowls.
  • Divide the seasoned black beans and corn between the bowls.
  • Add the cottage cheese, cherry tomatoes, avocado, red onion, and salsa.
  • Drizzle the lime juice over the bowls.
  • Sprinkle with chopped cilantro.
