Ingredients
- 4 cups cooked long grain brown rice
- 1¼ cups fat-free salsa
- 1 teaspoon ground cumin
- 1 can (15 ounce) traditional refried beans
- 10 ounces frozen corn kernels thawed
- 1 can (4oz) green chile peppers diced
- 1 tablespoon chili powder
- 1 package (10oz) frozen chopped spinach thawed and set to drain in a strainer over a bowl
- ¾ cup reduced-fat Mexican style shredded cheese divided
- 2 tablespoon fresh chopped cilantro for garnish
Instructions
- Set your oven to 375ºF to preheat
- Use cooking spray to lightly cover a 2-quart baking dish
- Mix together the rice, salsa, and cumin in a large mixing bowl.
- Take 2 cups of the rice blend and spread it evenly at the bottom of the coated baking dish.
- In a separate large mixing bowl, mix the refried beans, corn, chili peppers, and chili powder.
- With a rubber spatula, layer the bean blend over the rice in the baking dish, smoothing the surface.
- Remove any remaining water from the spinach or collard greens.
- Layer the greens over the bean mixture.
- Scatter 6 tablespoons of cheese over the greens.
- Layer the rest of the rice blend over the cheese and smooth the surface.
- Scatter the leftover cheese on top.
- Place the casserole on a large baking sheet with aluminum foil, to prevent spills.
- Bake for around 30 minutes, or until the cheese is golden and bubbling
- Garnish with cilantro, divide into 6 portions, and it's ready to serve.
