- 4 cups fresh basil leaves packed
- 1 cup olive oil
- 1 cup Parmigiano-Reggiano cheese freshly grated
- 6 cloves garlic minced
- ⅔ cup pine nuts
- pinch salt to taste
- pinch ground black pepper to taste
Instructions
- In a food processor, add fresh basil, olive oill, and grated Parmigiano-Reggiano cheese.
- Pulse food processor to mix.
- In the food processor, add garlic, pine nuts, salt, and black pepper.
- Pulse until pesto is well combined and smooth.
To Store:
- If not using immediately, lay out a sheet of plastic wrap on a flat surface.
- Roll the plastic wrap around the pesto for form into the shape of a tube.
- Seal the plastic wrap around the pesto.
- Keep in the refrigerator until need, then cut a slice off the tube in the amount you need.
