Ingredients
 

  • 1 large egg
  • 2 large egg whites
  • salt to taste
  • ground black pepper to taste
  • ½ teaspoon olive oil
  • 1 medium scallions finely chopped
  • 1 small tomato seeded and diced
  • 3 large olives  sliced
  • 1 tablespoon diced green chiles
  • 2 tablespoon shredded reduced-fat Mexican cheese blend

Instructions
 

  • In a small bowl, add the egg, egg whites, salt, and pepper.
  • Using a wire whisk, mix well until just blended. Set aside.
  • In a large, nonstick omelet pan, add the olive oil.
  • Heat the oil over medium heat.
  • Pour the egg mixture into the pan. Tilt the pan so the eggs cover the entire bottom.
  • Cook without stirring until the bottom of the eggs starts to set, about 30 seconds.
  • Evenly sprinkle the scallion, tomato, olives, green chiles, and cheese over the eggs.
  • Cook the eggs, moving the pan back and forth over the heat, until fully cooked, about 3 to 4 minutes.
  • Fold the omelet in half and serve.
