Instructions
- Remove the green tops from the strawberries and slice them in half into a small bowl.
- Sprinkle the strawberries with half of the vanilla.
- In a large mixing bowl, beat the eggs until they are well blended.
- Add salt and the remaining vanilla to the eggs and mix well.
- Heat a 6-inch nonstick skillet over medium heat and pour the egg mixture into it.
- As the eggs begin to set, lift the edges gently with a spatula to allow the uncooked eggs to flow underneath.
- When the eggs are fully set, place the strawberries on one half of the omelet.
- Use a spatula to fold the other half of the omelet over the strawberries.
- Carefully slide the omelet from the pan onto a warmed plate.
- Cut the omelet into equal portions and serve immediately.
