Weight Watchers Baked Chimichangas
Ingredients
- ½ lb ground turkey breast
- 1¾ cup salsa
- 1 can 16oz) refried beans – fat-free
- 3 tbsp scallions sliced thin
- 1 tsp chili powder
- 4 can (4½ oz) mild green chili peppers drained and diced
- 1 cup monterey jack cheese – reduced-fat shredded
- 8 large burrito style tortillas – whole wheat
- 1 cup salsa
- ½ cup sour cream – non-fat
Instructions
- Preheat oven to 350 degrees F
- Prepare a large skillet by spraying with cooking spray
- In prepared skillet, add the ground turkey. Cook until lightly brown. Drain off the liquid.
- Add 1¾ cup salsa, beans, scallions, chili powder, and chili peppers. Cook approximately 3 minutes or until heated. Add in cheese. Stir to mix in
- Wrap the tortillas in aluminum foil and place in oven to warm. Approximately 7 – 10 minutes.
- Prepare a 13 x 9 x 2 baking dish by spraying with cooking spray
- In warm tortilla, place ½ cup of prepared turkey, fold in two sides and roll. Repeat for each tortilla.
- In prepared baking dish, carefully place each chimichanga with the fold side down. Bake in preheated oven uncovered, approximately 20 minutes or until browned and crispy
- Serve: topped with 1 Tbsp of sour cream and 2 Tbsp salsa
