Tips and Tricks
Coating the Chicken
For a more even coating, make sure to shake the chicken and taco seasoning thoroughly in the Ziploc bag. You can also let the chicken sit for a few minutes to allow the seasoning to penetrate the meat better.
Preparing the Casserole Dish
To ensure the chicken doesn’t stick, generously spray the casserole dish with Pam or another non-stick cooking spray. You can also line the dish with aluminum foil for easier cleanup.
Baking Evenly
Arrange the chicken breasts in a single layer in the casserole dish. This helps them cook evenly and ensures each piece is fully baked.
Salsa Addition
Adding the salsa in the last 5 minutes of baking helps it to warm through without becoming too watery. If you prefer a more baked-in flavor, you can add the salsa at the 15-minute mark instead.
Checking Doneness
Use a meat thermometer to check the internal temperature of the chicken. It should reach 165°F to be fully cooked. This ensures the chicken is safe to eat and retains its juiciness.
Serving Suggestions
Serve the chicken with a side of steamed rice, quinoa, or a simple salad. You can also pair it with some warm tortillas for a complete meal.
Garnishing
For extra flavor and a pop of color, garnish the chicken with chopped fresh cilantro or green onions when serving.
Storage and Reheating
Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or in a 350°F oven until warmed through.
Freezing

Ingredients
- 1¼ ozs taco seasoning
- 1 cup salsa
- 1 lb boneless skinless chicken breast
- ¼ cup fat-free sour cream
Instructions
- Put taco seasoning and chicken in a Ziploc bag; shake to coat well.
- Coat casserole dish with Pam.
- Place chicken in casserole dish.
- Bake for 30 minutes at 375 degrees.
- Top chicken with salsa in the last 5 minutes (at 25 minutes).
- Top with sour cream when serving.
