Tips and Tricks
Preparing Ingredients
Ensure all ingredients are at room temperature before starting. This helps them blend together more smoothly, especially the peanut butter and shortening.
Mixing the Dough
In a large mixing bowl, beat the peanut butter, shortening, brown sugar, and granulated sugar until the mixture is creamy and well combined. This usually takes about 2-3 minutes.
Adding Wet Ingredients
Add the eggs and water to the mixture. Beat until the eggs are fully incorporated and the mixture is smooth.
Adding Dry Ingredients
Gradually add the salt, baking soda, and sifted all-purpose flour to the wet mixture. Beat on low speed to prevent the flour from flying out of the bowl. Mix until just combined, being careful not to overmix as this can make the cookies tough.
Forming the Cookies
Roll the dough into 1-inch balls and place them on an ungreased baking sheet about 2 inches apart. Press the tops of the dough balls with a fork dipped in flour to create a crisscross pattern.
Baking
Bake in the preheated oven at 375°F for about 12 minutes, or until the edges are lightly golden. Be careful not to overbake, as the cookies will continue to cook slightly after being removed from the oven.
Cooling
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. This helps them set and become more stable.
Storing Cookies
Store the cooled cookies in an airtight container at room temperature for up to a week. For longer storage, you can freeze the cookies in a freezer-safe container for up to three months.
Customizing the Recipe
Feel free to customize the cookies by adding chocolate chips, chopped nuts, or even a sprinkle of sea salt on top before baking. You can also substitute half of the shortening with butter for a slightly different texture and flavor.

Weight Watchers Peanut Butter Cookies
Ingredients
- 1 cup peanut butter
- 1 cup shortening
- 1 cup brown sugar packed
- 1 cup sugar
- 2 eggs
- 2 tbsp water
- 1 tsp salt
- 1 tsp baking soda
- 2½ cups all-purpose flour sifted
Instructions
- Preheat oven to 375° F
- In a large mixing bowl, add peanut butter, shortening, brown sugar, and sugar. Beat until mixed well. Add eggs and water, and beat until mixed well.
- Add salt and baking soda, then gradually beat in the flour.
- Roll dough into balls, place on baking sheet, and press tops with a floured fork one way, then the other, making an X
- Bake approx 12 minutes in the preheated oven.
