Weight Watchers Thanksgiving Leftover Soup

Ingredients
- 2 tbsp butter or margarine
- 1 cooked turkey carcass chopped to fit the pot (large pieces)
- 1 stalk celery chopped
- 1 carrot chopped
- 1 onion chopped
- 1 pinch dried thyme or sage
- 2-3 cloves garlic crushed
- 6-12 cups water
- 1 tomato chopped or 1 6oz can tomato paste
- 3 chicken bouillon
- turkey gravy (optional)
- 1 stalk celery sliced
- 1 cup mushrooms
- 2 carrots peeled and sliced
- 6-8 oz small pasta or ½ cup uncooked rice
- salt to taste
- ground black pepper to taste
- 3 tbsp parsley minced
Instructions
- Heat a soup pot over medium heat.
- Add butter and melt.
- Add in the turkey carcass pieces stirring often for approx 8 to 10 minutes or until lightly browned.
- Add in celery, carrots, onion, thyme, and garlic and cook stirring occasionally for 10 mins.
- Add water to cover the turkey carcass. Add in tomato, bouillon, and gravy
- Bring to a boil, reduce heat, and simmer for 2 or 3 hours.
- Using a colander, strain the broth.
- Return the strained broth back into the soup pot.
- Bring broth to a boil. Add in celery, mushrooms, carrots, and pasta or rice. Bring back to a boil and cook for 10 to 20 minutes, or until the vegetables are tender and the pasta is done.
- Add in salt, pepper, and parsley. Stir to mix well.
- Optional: You can also add in cooked chicken or turkey as seen in the photo.
