  • Heat a skillet at medium heat.
  • Add olive oil.
  • Add shallots. Stir and cook approximately 10 minutes, or until softened.
  • Add butter, and melt.
  • Whisk in flour until well combined.
  • Add salt, and cinnamon. Whisk in light cream for approximately 2 minutes, or until well combined.
  • Add pumpkin puree and ½ cup low-sodium chicken broth. Stir to mix well.
  • Stir in chicken broth ¼ cup at a time until the consistency is to your liking.
  • Let simmer 5 – 10 minutes, or until the sauce is at desired consistency.
  • Stir in fresh sage, and fresh thyme
