Vegan Mexican Taco Filling
Equipment
Ingredients
- 1 tbsp olive oil
- 1 bell pepper chopped
- 2 cloves garlic minced
- 1 onion diced
- 2 cans black beans – (14.5 oz each) rinsed, drained, and mashed
- 2 tbsp yellow cornmeal
- 1 tsp paprika
- 1 tsp cayenne pepper
- 1½ tbsp cumin
- 1 tsp chili powder
- 1 cup salsa
Instructions
- In a medium skillet, heat oil over medium/high heat.
- Add bell pepper, garlic, and onion, and cook until tender.
- Stir in beans, then cornmeal. Add paprika, cayenne pepper, cumin, chili powder, and salsa. Mix well
- Cover skillet and cook approx 5 minutes.
