Weight Watchers Alfredo Macaroni Recipe
Ingredients
- 2 cups elbow macaroni
- 3½ cups uncooked cauliflower rice
- 3 cloves garlic
- 1 cup fat free evaporated milk
- kosher salt to taste
- fresh ground black pepper to taste
- ½ cup grated parmesan cheese
- 1 teaspoon chopped chives for serving (optional)
Instructions
- Fill a big saucepan with water and bring it to a boil.
- Boil the pasta for approximately 9 minutes until soft.
- Once done, drain the pasta and set aside.
- Spray a large nonstick pan with cooking spray and heat it over medium-high heat.
- Add the cauliflower and garlic to the pan and cook, stirring occasionally, until the cauliflower is tender, which takes approximately 4 minutes.
- Transfer the cauliflower mixture to a blender.
- Add the milk, salt, and black pepper to the blender and blend until the mixture is smooth.
- Add the cheese and blend until the sauce is well mixed.
- Pour the sauce back into the same pan.
- Add the pasta to the sauce and stir to mix well.
- Cook over medium heat for 3 minutes until heated through.
