  • Boil the pasta for approximately 9 minutes until soft.
  • Once done, drain the pasta and set aside.
  • Spray a large nonstick pan with cooking spray and heat it over medium-high heat.
  • Add the cauliflower and garlic to the pan and cook, stirring occasionally, until the cauliflower is tender, which takes approximately 4 minutes.
  • Transfer the cauliflower mixture to a blender.
  • Add the milk, salt, and black pepper to the blender and blend until the mixture is smooth.
  • Add the cheese and blend until the sauce is well mixed.
  • Pour the sauce back into the same pan.
  • Add the pasta to the sauce and stir to mix well.
  • Cook over medium heat for 3 minutes until heated through.
