Weight Watchers Bran Muffins with Raisins
Ingredients
- 1 cup whole wheat flour
- ⅔ cup wheat bran
- ¼ teaspoon sea salt
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- ¼ cup unsalted butter softened
- ⅔ cup light brown sugar
- 1 large egg
- 1 cup 1% low-fat buttermilk (1%)
- 1 cup raisins chopped
Instructions
- Preheat your oven to 400º F.
- Spray a 12-hole muffin tin with cooking spray to prevent sticking.
- In a medium-sized bowl, combine flour, wheat bran, salt, baking soda, and cinnamon. Mix well and set aside.
- In a large bowl, use an electric mixer to cream butter and sugar until the sugar is dissolved. Then, add an egg and beat until well combined.
- Gradually add ⅓ of the bran mixture and ⅓ cup of buttermilk to the large bowl, mixing until just combined. Repeat this step, alternating between the bran mixture and buttermilk, until everything is mixed in.
- Fold in raisins to the batter.
- Evenly divide the batter among the 12 muffin cups in the prepared pan.
- Place the pan in the middle of your preheated oven.
- Bake the muffins for about 15-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
