  • Preheat your oven to 400º F.
  • Spray a 12-hole muffin tin with cooking spray to prevent sticking.
  • In a medium-sized bowl, combine flour, wheat bran, salt, baking soda, and cinnamon. Mix well and set aside.
  • In a large bowl, use an electric mixer to cream butter and sugar until the sugar is dissolved. Then, add an egg and beat until well combined.
  • Gradually add ⅓ of the bran mixture and ⅓ cup of buttermilk to the large bowl, mixing until just combined. Repeat this step, alternating between the bran mixture and buttermilk, until everything is mixed in.
  • Fold in raisins to the batter.
  • Evenly divide the batter among the 12 muffin cups in the prepared pan.
  • Place the pan in the middle of your preheated oven.
  • Bake the muffins for about 15-20 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
