Weight Watchers Broccoli Quiche
Equipment
Ingredients
- 20 oz frozen chopped broccoli thawed, rinsed & drained
- 1 medium onion chopped
- 1 medium red bell pepper chopped
- 4 oz mozzarella cheese – part-skim
- 1½ cups 1% low-fat milk
- 2 clove garlic chopped
- 1 tsp salt
- ¼ tsp ground black pepper
- ¾ cup egg substitute
- ¾ cup Bisquick baking mix – low-fat
Instructions
- Preheat oven to 400° F
- Prepare 11×7 glass baking dish by spraying with Pam cooking spray.
- Add ½ of the broccoli, ½ of the onion, and ½ of the red bell pepper
- Top with cheese
- Add the rest of the broccoli, onion, and pepper.
- In a blender, add milk, garlic, salt, pepper, egg substitute, and bisquick. Blend until mixture is smooth.
- Pour on top of broccoli mixture
- In preheated oven, bake for 50 minutes at 400° F, or until lightly browned.
