Weight Watchers Broccoli Quiche

Ingredients you will need:

  • 20 oz frozen chopped broccoli thawed, rinsed & drained
  • 1 medium onion chopped
  • 1 medium red bell pepper chopped
  • 4 oz mozzarella cheese – part-skim
  • 1½ cups 1% low-fat milk
  • 2 clove garlic chopped
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • ¾ cup egg substitute
  • ¾ cup Bisquick baking mix – low-fat

How to make:

  1. Preheat oven to 400° F
  2. Prepare 11×7 glass baking dish by spraying with Pam cooking spray.
  3. Add ½ of the broccoli, ½ of the onion, and ½ of the red bell pepper
  4. Top with cheese
  5. Add the rest of the broccoli, onion, and pepper.
  6. In a blender, add milk, garlic, salt, pepper, egg substitute, and bisquick. Blend until mixture is smooth.
  7. Pour on top of broccoli mixture
  8. In preheated oven, bake for 50 minutes at 400° F, or until lightly browned.
