Ingredients
 

  • 20 oz frozen chopped broccoli thawed, rinsed & drained
  • 1 medium onion chopped
  • 1 medium red bell pepper chopped
  • 4 oz mozzarella cheese – part-skim
  • cups 1% low-fat milk
  • 2 clove garlic chopped
  • 1 tsp salt
  • ¼ tsp ground black pepper
  • ¾ cup egg substitute
  • ¾ cup Bisquick baking mix – low-fat

Instructions
 

  • Preheat oven to 400° F
  • Prepare 11×7 glass baking dish by spraying with Pam cooking spray.
  • Add ½ of the broccoli, ½ of the onion, and ½ of the red bell pepper
  • Top with cheese
  • Add the rest of the broccoli, onion, and pepper.
  • In a blender, add milk, garlic, salt, pepper, egg substitute, and bisquick. Blend until mixture is smooth.
  • Pour on top of broccoli mixture
  • In preheated oven, bake for 50 minutes at 400° F, or until lightly browned.
