Weight Watchers Chicken Cacciatore
Equipment
Ingredients
- 1 tsp olive oil
- 1 clove garlic minced
- 1 onion chopped
- 1 yellow bell pepper chopped
- 1 green bell pepper chopped
- 1 lb (4-4 oz pieces) boneless skinless chicken breast pounded flat
- salt and pepper to taste
- 1 can (29 oz) Italian style tomatoes
- ½ cup dry red wine
- 2 tbsp fresh parsley chopped
- 3 cups cooked linguine
Instructions
- Lightly coat a large nonstick skillet with cooking spray. Add olive oil and heat.
- Add garlic, onion, bell peppers and chicken to skillet. Cook until vegetables are softened and chicken is browned and juices are clear.
- Stir in red wine and tomatoes. Add salt and black pepper, to taste.
- Bring to boil, then reduce heat to medium-low. Cover and simmer 20 minutes.
- Sprinkle with parsley and serve with linguine.
