  • Lightly coat a large nonstick skillet with cooking spray. Add olive oil and heat.
  • Add garlic, onion, bell peppers and chicken to skillet. Cook until vegetables are softened and chicken is browned and juices are clear.
  • Stir in red wine and tomatoes. Add salt and black pepper, to taste.
  • Bring to boil, then reduce heat to medium-low. Cover and simmer 20 minutes.
  • Sprinkle with parsley and serve with linguine.
