Mexican Carnitas is a delicious pork dinner. Tender and tasty, it’s filled with spices and cooked in a slow cooker until it falls apart.

A healthy, low calorie, low carb dinner option with only 223 calories. Weight Watchers friendly with 6 WW Freestyle Points and 6 Smart Points.

This recipe makes 10 servings, so you have have it for dinner multiple nights, or have it for lunch the next day!

Tips and Tricks

Preparing the Pork

Trim any excess fat from the pork shoulder before applying the spice rub. This ensures the dish isn’t too greasy and helps the spices penetrate the meat better.

Applying the Spice Rub

Make sure to thoroughly rub the spice mixture all over the pork, getting into any nooks and crannies. This ensures the flavors are evenly distributed throughout the meat.

Using the Crock Pot

When adding the chicken broth, pour it around the sides of the Crock Pot to avoid washing off the spice rub from the top of the pork. This keeps the seasoning intact and ensures a flavorful crust.

Cooking Time

Cooking the pork on low for 10 hours allows the meat to become incredibly tender and flavorful. If you need to speed up the process, you can cook on high for about 5-6 hours, but the low and slow method yields the best results.

Flipping the Pork

Flipping the pork halfway through cooking helps it cook evenly and allows the flavors to meld better. Use tongs to carefully turn the meat without disturbing the spice rub too much.

Shredding the Pork

Once the pork is done, remove it from the Crock Pot and let it rest for a few minutes before shredding. This helps retain the juices and makes shredding easier. Use two forks to pull the meat apart into bite-sized pieces.

Freezing

This shredded pork freezes well. Allow it to cool completely before transferring to freezer-safe containers. It can be frozen for up to three months. Thaw in the refrigerator overnight before reheating.

  • Put bay leaves on bottom of Crock Pot.
  • In a small mixing bowl, combine cinnamon, cumin, garlic powder, coriander, and salt. Mix.
  • Rub pork with spice mix, and place in Crock Pot on top of bay leaves.
  • Add chicken broth to the Crock Pot, don't pour over pork, pour around it to not disturb the spice mix on top.
  • Put Crock Pot on low setting, cover and cook approx 10 hours or until the pork will shred with fork, flipping the pork halfway through,
  • Remove pork from Crock Pot and shred with a fork.
