Weight Watchers Cornmeal Breaded Fish Fingers (Air Fryer)

- nonstick cooking spray
- 1 pound tilapia fillets
- ¼ cup cornstarch
- 1 large egg
- ½ cup yellow cornmeal
- ¾ teaspoon kosher salt
- ¼ teaspoon cayenne pepper
Tartar Sauce
- ¼ cup low-fat mayonnaise
- ¼ cup fat-free plain yogurt
- 3 tablespoon sweet pickle relish drained
- 2 tablespoon fresh dill chopped
- 1 tablespoon shallots minced
- 1 tablespoon fresh lemon juice
- ¼ teaspoon ground black pepper
- ¼ teaspoon lemon zest
Instructions
- Preheat your oven to 200°F and line a baking sheet with parchment paper.
- Cut your fish fillets lengthwise into 3/4-inch-wide strips, then cut them crosswise into 3-inch lengths. You should have approximately 20 fingers of fish.
- Spread some cornstarch onto a sheet of wax paper.
- Beat an egg in a small bowl.
- On a separate sheet of wax paper, mix together some cornmeal, salt, and cayenne.
- Dredge your fish fingers in the cornstarch, tapping off any excess, and then dip them into the beaten egg, allowing any excess to drip off.
- Coat your fish with the cornmeal mixture, pressing it lightly to ensure it adheres, and then arrange them on the prepared baking sheet.
- Lightly spray the fish fingers with nonstick spray.
- Depending on your air fryer's settings, preheat a 6- to 8-quart air fryer to either 390°F or 400°F for 3 minutes.
- Spray the air fryer basket with nonstick spray and add 10 fish fingers to the basket.
- Air fry the fish for 5 minutes and then turn them over.
- Air fry the fish fingers for an additional 3 minutes, or until they are golden brown and firm to the touch.
- Transfer the fish to a wire rack and keep them warm in your preheated oven.
- Air fry the remaining 10 fish fingers.
For the Tarter Sauce:
- Meanwhile, to make your tartar sauce, combine all of the tartar sauce ingredients in a serving bowl until they are well mixed. Thin the sauce with water if needed. This recipe should yield approximately 3/4 cup of tartar sauce.
