Weight Watchers Homemade Hash Browns
Ingredients
- 2 large Idaho Potatoes peeled and shredded
- 2 teaspoon olive oil
- ½ teaspoon salt
- ½ teaspoon paprika
- ¼ teaspoon ground black pepper
- ⅓ cup reduced-sodium chicken broth
- 2 tablespoon red wine vinegar
Instructions
- Place the potatoes in a large saucepan.
- Fill the saucepan with enough water to cover the potatoes.
- Set the saucepan on medium-high heat.
- Bring the water to a boil, and boil for 5 minutes.
- Drain the water from the saucepan and set the potatoes aside.
- Heat oil in a large nonstick skillet over medium-high heat.
- Add the drained potatoes to the skillet.
- Add paprika, salt, and pepper on the potatoes and stir to coat well.
- Sauté the potatoes for 2 minutes.
- Pour the chicken broth and red wine vinegar into the skillet.
- Cook the potatoes, stirring frequently, approximately 3 minutes, or until the liquid is absorbed.
