Tips and Tricks

Draining the Potatoes

Ensure the potatoes are well-drained to avoid soggy patties. After shredding, place the potatoes in a clean kitchen towel and squeeze out as much moisture as possible. This will help the patties hold together better and become crispier when baked.

Shredding the Onion

When shredding the onion, do it over a bowl to catch any juices. You can then drain off the excess liquid before adding the shredded onion to the potato mixture. This helps control the moisture content and prevents the patties from becoming too wet.

Mixing Thoroughly

Make sure to mix the ingredients thoroughly. This ensures that the matzo meal or flour, baking powder, and seasonings are evenly distributed, which helps the patties bind together and bake evenly.

Forming Uniform Patties

Use a ¼ cup measuring cup to scoop out the mixture for each patty. This ensures all patties are the same size and cook evenly. Flatten each patty slightly with your hands to help them bake uniformly.

Using Parchment Paper

Consider lining the baking sheets with parchment paper before spraying with nonstick cooking spray. This prevents sticking and makes flipping the patties easier.

Checking for Crispiness

Keep an eye on the patties towards the end of the baking time. If they need more crispiness, you can bake them for an additional 5 minutes or place them under the broiler for a couple of minutes. Watch closely to avoid burning.

Serving Suggestions

Serve the baked potato patties with a side of sour cream or applesauce for a classic pairing. You can also try them with a dollop of Greek yogurt mixed with fresh herbs for a tangy twist. Add a simple salad or roasted vegetables to round out the meal.
