Draining the Potatoes

Shredding the Onion
When shredding the onion, do it over a bowl to catch any juices. You can then drain off the excess liquid before adding the shredded onion to the potato mixture. This helps control the moisture content and prevents the patties from becoming too wet.
Mixing Thoroughly
Make sure to mix the ingredients thoroughly. This ensures that the matzo meal or flour, baking powder, and seasonings are evenly distributed, which helps the patties bind together and bake evenly.
Forming Uniform Patties
Use a ¼ cup measuring cup to scoop out the mixture for each patty. This ensures all patties are the same size and cook evenly. Flatten each patty slightly with your hands to help them bake uniformly.
Using Parchment Paper
Consider lining the baking sheets with parchment paper before spraying with nonstick cooking spray. This prevents sticking and makes flipping the patties easier.
Checking for Crispiness

Weight Watchers Baked Latkes
Equipment
Ingredients
- 2 lbs potatoes shredded
- 1 onion shredded
- 2 eggs
- Salt and Black Pepper to taste
- ¼ cup matzo meal or flour
- ¼ tsp baking powder
- nonstick cooking spray as needed
Instructions
- Preheat the oven to 425 degrees F.
- Prepare 2 baking sheets by spraying with Pam cooking spray. Set aside.
- Drain any excess liquid from the shredded potatoes. Put in a large mixing bowl.
- Add matzo meal, onion, baking powder, salt, pepper, and egg. Mix well
- Take ¼ cup of mix, form into a patty, and place on prepared baking sheet. Repeat for the rest of the mix.
- Bake in preheated oven for 15 minutes. Flip and bake an additional 10 minutes.
- Serve with sour cream or applesauce
