  • Preheat oven to 350°F.
  • Prepare an 8×8 inch baking dish by spraying with non-stick cooking spray.
  • In prepared baking dish, place shredded potatoes on the bottom in an even layer.
  • Sprinkle the shredded cheddar cheese on top of the potatoes.
  • Top cheese with canadian bacon and green onions.
  • In a large mixing bowl, add eggs, milk, salt, and pepper. Using a whisk, whisk until combined well.
  • Pour the egg mixture on top of the casserole, and spread to an even layer.
  • In preheated oven, bake, uncovered for approximately 40 minutes, or until the center is set.
  • Before cutting, let rest for 5 minutes.
