Weight Watchers Spinach Mushroom Quiche
Ingredients
- nonstick cooking spray
- ½ tsp olive oil
- 1 cup fresh mushrooms sliced
- 2 tsp garlic minced
- 10 oz frozen spinach
- ½ medium onion chopped
- ½ cup fat-free cottage cheese
- 3 eggs
- 1 cup artichoke hearts chopped
- salt to taste
- black pepper to taste
Instructions
- Preheat oven to 350° F
- Prepare a pie dish by spraying with non-stick cooking spray.
- In a saute pan over medium/high heat, add olive oil.
- Add mushrooms, garlic, spinach, and onions.
- Saute until the liquid reduces.
- Stir in cottage cheese, eggs, artichoke hearts, salt, and pepper.
- In the prepared pie dish, add contents of saute pan.
- In preheated oven, bake for 45 minutes.
