Weight Watchers Spinach Mushroom Quiche

Ingredients you will need:

  • nonstick cooking spray
  • ½ tsp olive oil
  • 1 cup fresh mushrooms sliced
  • 2 tsp garlic minced
  • 10 oz frozen spinach
  • ½ medium onion chopped
  • ½ cup fat-free cottage cheese
  • 3 eggs
  • 1 cup artichoke hearts chopped
  • salt to taste
  • black pepper to taste

How to make:

  1. Preheat oven to 350° F
  2. Prepare a pie dish by spraying with non-stick cooking spray.
  3. In a saute pan over medium/high heat, add olive oil.
  4. Add mushrooms, garlic, spinach, and onions.
  5. Saute until the liquid reduces.
  6. Stir in cottage cheese, eggs, artichoke hearts, salt, and pepper.
  7. In the prepared pie dish, add contents of saute pan.
  8. In preheated oven, bake for 45 minutes.
