Tips and Tricks
Ground Beef
Use extra lean ground beef to reduce the fat content and make the dish healthier. If there is any excess fat, drain it off after browning.
Onion
Chop the onion finely to ensure it cooks evenly and blends well with the other ingredients.
Tomatoes
Drain the diced tomatoes well to prevent the dish from becoming too watery. You can also use fire-roasted tomatoes for added flavor.
Corn
Add the frozen corn directly to the skillet. There’s no need to thaw it first as it will cook quickly in the pan.
Black Beans
Rinse the black beans thoroughly under cold water. This removes excess sodium and makes the beans taste fresher.
Chili
Adjust the amount of crushed chili to your preferred spice level. You can start with less and add more if you like it spicier.
Sour Cream
Use fat-free sour cream to keep the dish light. Make sure to stir it in gently to prevent curdling.
Cheese
Grate your own low-fat cheddar cheese. Pre-shredded cheese often contains additives that can affect melting and texture.
Simmering
Simmer the mixture for an additional 10 minutes after adding the sour cream to allow the flavors to meld together. Stir occasionally to prevent sticking.
Serving
Top the dish with shredded cheese just before serving. For extra flavor, add a sprinkle of chopped green onions or fresh cilantro.
Storage
Store any leftovers in an airtight container in the fridge. Reheat gently on the stovetop or in the microwave, stirring occasionally to ensure even heating.

What is the serving size?? I see calorie count but no where that says how many grams or cups is the serving.
Hi Ann,
The serving size is 326 grams. I updated the recipe!
Seriously? No spices at all? Dull and boring. Add salt, pepper, garlic and taco seasoning and it’s delicious. Spices don’t add calories.
Hi Connie,
Thank you for the feedback! You sure can add spices to this recipe. We try to do a variety of recipes to fit everyone’s taste, and some people don’t like spicy. We have a bunch of other recipes with a lot of spices, so I hope you can find some to your taste!
I made this but used light plain yogurt, and added 1 tbsp of chili powder, paprika, onion powder, dash of cayenne pepper and it needed salt and pepper to taste. I used a little cheese not much and we thought it was good !
