Weight Watchers Pecan Sandies Cookies
Ingredients
- ½ cup sugar
- ½ cup light brown sugar
- 1 cup powdered sugar sifted
- 1 cup margarine softened
- 1 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp cream of tartar
- 4 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking soda
- 2 cups pecans chopped
- ½ cup sugar for decoration
Instructions
- Preheat oven to 375° F
- Using a large mixing bowl, add margarine, ½ cup white sugar, ½ cup brown sugar, vegetable oil, and powdered sugar and cream until smooth. One at a time beat in eggs, stir in vanilla.
- In a separate bowl, combine baking soda, flour, salt, and cream of tartar; stir into the wet mixture. Stir in pecans.
- Roll dough into 1 inch balls and roll in remaining white sugar.
- Line cookie sheet with parchment paper, place cookies approx 2 inches apart
- Bake 10 – 12 minutes, or until the edges are golden brown.
- Cool on wire racks
