  • Preheat the oven at 400° F
  • In a large mixing bowl, add butternut squash, garlic, and olive oil
  • Toss to coat
  • Season with salt and pepper, to taste
  • Transfer squash to a baking sheet and spread to a single layer
  • In preheated oven, roast the squash, cook approx 25 – 30 minutes or until lightly browned, and tender.
