Fall is a great time for produce! Butternut Squash is a favorite in my home. The sweet and nutty flavor pairs well with Chicken, Pork or Pasta.

  1. Preheat the oven at 400° F
  2. In a large mixing bowl, add butternut squash, garlic, and olive oil
  3. Toss to coat
  4. Season with salt and pepper, to taste
  5. Transfer squash to a baking sheet and spread to a single layer
  6. In preheated oven, roast the squash, cook approx 25 – 30 minutes or until lightly browned, and tender.
