A simple vegetable side dish with garlic and olive oil.
Fall is a great time for produce! Butternut Squash is a favorite in my home. The sweet and nutty flavor pairs well with Chicken, Pork or Pasta.

Weight Watchers Roasted Butternut Squash
Equipment
Ingredients
- 1 butternut squash peeled, seeded, and cut into 1-inch cubes
- 2 tbsp olive oil
- 2 cloves garlic minced
- salt to taste
- ground black pepper to taste
Instructions
- Preheat the oven at 400° F
- In a large mixing bowl, add butternut squash, garlic, and olive oil
- Toss to coat
- Season with salt and pepper, to taste
- Transfer squash to a baking sheet and spread to a single layer
- In preheated oven, roast the squash, cook approx 25 – 30 minutes or until lightly browned, and tender.
